It’s time for the first post of 2016 — a simple, but flavorful dish that works as an appropriate accompaniment for some chicken breasts or lamb or anything else that strikes your fancy. This isn’t something that takes particularly long to prepare, so you could potentially whip it up as part of an easy weeknight meal, though I made it for myself on a weekend when I didn’t want to do much intense cooking.
If you look at the “about” section on this website, you’ll quickly figure out that I’m not really one for tomatoes. I think it’s largely a texture thing because I can tolerate sauces… and sun-dried tomatoes. I wanted to finish up a jar of the latter that I happened to have in my fridge, plus I had some spinach on hand as well. And thus my desire to make this couscous was born….
